Prawn Pulav

Prawn Pulav - Laxmi Bhandary

Ingredients:


Basumathi rice 2 cups,
water 4 cups,
onions 2 sliced,
ginger garlic paste 1 tsp,
cloves, cardamom and cinnamon 3 pieces each,
ghee 3 tbsps, and
salt to taste.


Method:
Clean rice and allow to soak for 15 minutes. Meanwhile heat ghee, fry the spices (cloves, cardamom and cinnamon) onion and ginger garlic paste, till onions are brown. Add it to the rice, add salt and cook on low fire till the rice is cooked

Mean while prepare the prawn mixture Ingredients:
Clean prawns 200 gms,
oil 4 tbsps,
red chillies 3,
green chillies 3,
ginger 1 small piece,
garlic 6 flakes,
coriander leaves 1/2 cup,
mint leaves 1/2 cup,
cashew nut 2 tbsps,
curds half cup.
Grind all the ingredients together & mix with curds.
Add prawns and salt, allow to soak for 20 minutes.
Heat oil, add prawn mixture, cook till almost dry.
Add the prawns to the cooked rice, mix well gently.
Serve hot with raitha.
