Kubbe Sukka


Kubbe Sukka - Nisha Baliga Shenoy

Clams Sukka ( Kubbe Sukke ) Marvai Sukka 200 Clams
1 medium onion 

TO GRIND
8 Garlic cloves
2 cloves
1 onion
2 tbsp coriander seeds
1 tsp Jeera seeds
12 pepper corn.
10 red dry chillies
1/2 tsp haldi pd
1 tsp garam masala pd
cherry size tamarind
2 cups grated coconut.

some curry leaves
salt to taste
oil n ghee

HOW TO PROCEED

Wash the clams and rinse twice or thrice in water.
In a Thick bottom vessel ( I usually use the Idli steam steamer) pour the clams and cook it.
The clams will open on its own. ( No need to add water to the clams ..just steam it.)
The clams tend to leave water. if needed collect the water and strain it thru a strainer. 
Open the clams , discard one side and keep aside the side which has flesh on it.
Some just take out flesh and discard both sides .
Now the cooking part.
Heat oil in a pan, add the chopped onions and fry all the items which comes under TO GRIND.
Then grind all the items to a fine paste except coconut . Finally add coconut and grind coarsely.
Heat ghee in a pan, add the chopped onions, curry leaves, fry well.
Add the ground masala, salt and the water reserved from clams.
Add the clams and mix well. 
Bring it to a boil.
Kubbe sukke is ready.
