Jeera Rice

Jeera Rice - Laxmi Bhandary


Ingredients: 
2 cups basumathi rice, 3 tbsps ghee, 1 tbsp cumin seeds, 3 cloves, 3 cardamom pods, 1 cinnamon piece, 2 tbsps cashew nut pieces, 1/2 cup onion paste, 2 tsps ginger garlic paste and salt to taste.
Method: 
Wash rice and put it in a colander. Let the water drain off. Heat ghee in a frying pan. Fry the cashew nut pieces, remove and keep aside. Put cumin, cloves, cardamom and cinnamon in the same hot ghee and fry for a minute. Add onion paste and ginger garlic paste and fry for 2 minutes. Then add rice, stir and fry for another 2 minutes. Add 4 cups of boiling water and salt to taste. Cover the pan and cook on slow fire. When rice is cooked, mix the cashew nuts and remove from flame.
