Chole Batura

Chole Batura - Laxmi Bhandary

Batura:

Ingredients: Maida 2and half cups, baking powder1 tsp, soda bi-carb a pinch, salt 1 tsp, yogurt half cup, sugar 1 tsp,oil 2 tbsps and and to fry. Method: Sieve together maida, baking powder, soda bi-carb and salt. Mix together yogurt and sugar. Add this to the flour and add about a cup of water and mix gradually to make a soft dough by kneading lightly. And add 2 tbsps of oil in to the dough and cover the dough with damp cloth. Keep it aside for an hour. Divide dough in to balls and make puris and deep fry.

Chole: 
Ingredients: Chick Peas ( Kabuli Chana) 1 cup, onions 3, ginger 1 inch pieces, garlic 8 to 10 cloves, tomatoes 3, fresh coriander leaves few, cumin seeds 2 tbsps, oil 4 tbsps, coriander powder 3 tsps, red chilli powder 2 tsps, green chillies 2, salt to taste. Method: Soak chana in water overnight. Next day pressure cook it. Chop onions, ginger and garlic. Wash green chillies and make a paste of ginger, garlic and green chillies. Wash and chop tomatoes. Chop coriander leaves. Dry roast cumin seeds and make powder. Heat oil in a pan, add chopped onions and saute till light brown. Add ggg paste and saute for 2 minutes. Add coriander powder, cumin powder, red chilli powder and saute till oil separates. Add boiled chana and mix well. Add tomatoes and little cooking water and salt. Cook till the chanas are well mixed with the gravy. Garnished with coriander leaves.
