Bhaingan Ka Bharta(Dhaba Style)

Bhaingan Ka Bharta(Dhaba Style) - Nisha Baliga Shenoy

Recipe:
2 large purple Brinjals ( Bhuttas)
2 onions finely chopped
4 tomotoes
1 tsp ginger garlic paste
1/2 tsp cumin seeds
1 big tsp garam masala
1/2 chillipd
salt to taste
coriander to garnish
1 tsp ginger grated to garnish
2 to 4 green chilled for garnishing.
METHOD !

Wash the brinjals. pat dry and apply oil . pierce with fork and roast on open flame till completely charred. keep aside when done and let it cool.
Heat oil in kadai. add the chopped onions and cumin seeds. fry well.
Add finely chopped tomotoes and saute. Fry on low flame it oil leaves sides.
Add the ginger garlic paste and stir well.
Now add garam masala and chilli pd and fry well.
Mean while Take the brinjals, peel off skin , check for any worms .
Mash the pulp and add the mashed pulp to the fried mixture.mix well . add salt and cook on low flame till done.
serve with hot rotis garnished with coriander leaves and ginger n chillies..Yummzz!
