Paya (Trotters) Soup

Paya (Trotters) Soup - Nutan Shenoy-Kini
Grind 2 -3 onions, coriander leaves, mint leaves, ginger, garlic, amchur and green chillies to a fine paste. Get trotters roasted not deskinned totally. In a lil oil saute the masala till it leaves the sides of the pan. Wash well and marinate the trotters with turmeric & gg paste for half an hour. Once the paste leaves the sides of the pan, it implies that the raw smell of masala has vanished. Now transfer the masala into a pressure cooker. Add the marinated trotters & saute for about 5 min. Add water, garam masala &salt. Close the lid of the cooker. Pressure cook on hi for 6-8 whistles. Serve hot with kadak pao or phulkas.

For novices....if you are getting trotters roasted,check for any hair left on the pieces. Clean well and then marinate.
