Maida dosa (Panna Polo) - Laxmi Bhandary
3 cups maida, 3 green chillies, 1/2 cup coconut gratings, 1/2 tsp cumin seeds, 1 tsp mustard seeds, 4 tsps ghee, 1 sprig curry leaves, 2 red chillies, salt to taste and oil for roasting.
Sieve maida. Mix coconut gratings, green chillies and salt and put in to mixy and grind. Mix maida in water, not allowing to form lumps. Add grind items and some more water to dilute the batter. Season with cumin, mustard and curry leaves , red chillies in ghee, using a ladle. Add salt and sugar. Place dosa pan on flame. Smear it with oil, spread batter thinly on pan when hot. Roast dosas on both sides. Serve with home made butter.
