'Indian Style Risotto with Spinach & Fried Eggs' - Sunayana`s Kitchen
Method -
1.Heat a non stick pan.Dazzle few drops of oil.Break the eggs and make fried/scrambled eggs as per choice.keep aside.
- Ingredients.
- Raw Rice (Soaked in water for 2-3 hrs.) – 1 cup
- Eggs – 2 (Optional)
- Spinach – A small bunch
- Garlic (Chopped) – 2 tsp
- Ginger (Chopped) – 1 tsp
- Green Chilly (Chopped) – 1 tsp or to taste
- Oil – 2-3 tsp
- Salt – To taste
- Water – 2 cups.
2.Wash spinach thoroughly under running water. Blend to make a ‘Puree’ with little water. Keep aside.
3.In a wok …heat oil and add garlic, green chilly & ginger. Saute till pink.
4.Add spinach puree and cook on medium heat for half a minute.
5.Add the soaked rice, salt and water. Give a nice stir.
6.Cover the wok and cook on medium heat till the rice gets cooked and absorbs all the water.
7.Just before serving add scrambled eggs.
‘Indian Style Risotto With Spinach & Fried Eggs’ ….is ready. Serve hot.
Sunayana’s Tip –
You can also add 3-4 tsp of ‘Fresh Cream’ just before serving this dish. This would give a nice, creamy and silky texture to your risotto.
