Dabeli Filling - Anagha Kulkarni
Recipe- Boil potatoes & mash them. In a flat pan add oil, on medium flame add the mashed potatoes, turmeric powder, ginger-garlic paste (can avoid garlic) salt, sugar, chilli powder, dabeli masala & cook for 5 minutes. spread the mixture evenly in the pan, spread chopped onion peanuts, pomegranate seeds, chopped coriander, grated dry coconut, 0 no. sev. Prepare 2 chutney. 1 sweet with tamarind, jiggery. 2 Green chutney with mint, coriander, green chillies. Apply both chutney on dabeli pav, add potato bhaji, fry for a while on a tava in butter & serve.
Dabeli masala- cumin seeds 1 tsp, fennel seeds 1/2 tsp , black peppers 1/2 tsp, coriander seeds 1 tsp, 5 cloves, 5 red chillies, nutmeg powder 1/4 tsp. 1 star masala, bay leaves 2, black cardamom 1, green cardamom 4, Dry roast all the ingredients one by one and grind.
Add this filling inside your bun or bread and have.
