Choco Khoya Kalakhand - Nandita Pai Shirali
Ingredients
Khoya - 1 heaped cup
Sugar - 1/2 cup
Milk - 3-4 tbsp
Cocoa Powder - 1 tbsp
Pistachio - 1/4 cup, flaked
Method
Crumble the khoya and heat it in a dry pan for a minute.
Add in the sugar and combine the two together. In about 4-5 minutes, you would notice the mixture getting sticky and forming into a ball.
Meanwhile, quickly combine together the milk and cocoa powder and ensure there aren't any lumps. Keep aside.
No, coming back to the stove, split the combined sugar-khoya mixture into half and transfer one half into a greased vessel (Make sure it is slightly greased with ghee.).
Gently but quickly flatten the mixture to a thickness of about an inch. Remember you still have half the mixture on the stove which shouldn't be left unattended for too long!
Now, add in the cocoa-milk mixture to the remaining half of the sugar-khoya mixture on the stove and combine well.
After another minute, transfer this onto the prepared dish that contains the first half of the mixture such that the cocoa-khoya mixture sits neatly over the plain khoya mixture.
Toss in some pistachio flakes on top and gently pat it down.
Allow this preparation to set in the fridge for an hour before you cut them into pieces.
This tastes divine warm and fresh, so you could munch on a teeny bit before setting them in the fridge :P
After an hour, carefully slice them into pieces and warm them just a little bit before serving. Serve them with a smile and be ready for those compliments! :)
