Chicken Milagu Masala - Vidya Nayak Shenoy
CHICKEN MILAGU MASALA
1. Chicken 750 gms
2. Onions 4 big
3. Tomatoes 4 medium
4. Curry leaves lots
5. Oil 4 tbsp or as reqd
6. Cinnamon 1’’
7. Cloves 2 nos
8. Cardamom 2 nos
9. Saunf 1 ½ tsp
10. Ginger garlic paste 1 tsp
11. Red chilli pwd 1 tsp
12. Kashmiri chilly pwd 1 tsp
13. Haldi pwd ½ tsp
14. Coriander pwd 2tsp
15. Pepper pwd 1 tbsp
16. Coriander leaves
17. Water ½ cup
18. Salt to taste
Method
1. In 4 tbsp oil add 1 piece of cinnamon, 2 cloves, 2 cardamoms and 1 ½ tsp saunf fry on simmer till u get a good aroma.
2. Then add 4big onions chopped and fry it to a light golden colour .when golden add lots of curry leaves and fry for a min . Take abt 2 tbsp of the fried onion curry leaves and keep aside for garnish.
3. To the remaining fried onions add 1 tsp of ginger garlic paste. Fry for a min.
4. Then add 4 medium tomatoes sliced and fry for 2 mins .
5. Add 1tsp of red chilli pwd , 1tsp of kashmiri chilli pwd, 2 tsp of coriander pwd ,salt to taste 1/2 tsp of haldi pwd and fry well till the mixture is soft and mushy .
6. Then add the chicken abt 750 gms and half a cup of water. Close lid and let it cook till half done.
7. At this stage add 1tbsp of pepper pwd and handful of chopped fresh coriander leaves. Close lid and cook till done, water evaporates and masala coats the chicken pieces.
8. Once done transfer to serving dish and top with the fried onions and curry leaves. Chicken Milagu masala ready .....( Thanks Reshma Chander )
