Avial


Avial - Shobha Hegde 

Ingredients: 

5-6 types of vegetables(green beans,carrots,drumsticks,pumpkin,potato,raw plantains)Coconut 5-6 tbsp, thick yogurt whisked well 1/2 cup,jeera 1tsp,few curry leaves ,coconut oil 2 tsp, slit green chillies 5-6. Boil all veggies with green chilies in a pressure cooker(1 whistle only) Grind coconut along with jeera to a fine paste. When veggies are done add salt .Let it cook for a few minutes,then add the coconut masala and the whisked yogurt along with 1/4 tsp of turmeric powder. When it boils add the curry leaves . When almost done add the coconut oil.
