Sweet Surnali


Sweet Surnali - Laxmi Bhandary

Ingredients: 

2 pav raw rice, half coconut gratings, half cup thick beaten rice (phova), 1 tsp turmeric powder, 1 tsp fenugreek seed( methi), 1 ball jaggery (according to your taste), salt, 1 small cup curd or butter milk, ghee for roasting.

Method:  

Soak rice, methi and beaten rice together in water for 2 hours. Wash. Grind with coconut gratings to a fine paste, adding curd or butter milk. Do not add much water. Before taking out, add crushed jaggery and salt. Transfer the batter to a vessel. Keep aside under cover, overnight. Next day dilute the batter a little with water if necessary. Spread the batter evenly on hot dosa pan smeared with ghee and roast under cover, one side only. Serve hot with home made butter (loni).

Cucumber or ashgourd surnali:  Add pieces of half cucumber or ash gourd core (seed removed) while grinding and follow the same method as above.
