Ribbon Cake

Ribbon Cake - Anagha Kulkarni

Make the cake batter as usual. Divide it into 3 parts. Meanwhile prepare Beetroot & Spinach puree. Boil beetroot and put it in the blender, add desiccated coconut & very little milk. Now for Spinach puree- add the spinach leaves in boiling water & remove immediately .After cooling squeeze it &put in the blender add desiccated coconut, vanilla essence & powdered sugar-no milk. Now keep one portion of cake batter as it is, for 2nd part add prepared red puree slowly, until you get the desired color. Same with the 3rd part with green puree. *You can make a three layered cake at a time by adding green part first, then the white one and lastly the pink one, pouring carefully. But I prepared three different cakes at a time in three small molds and applied strawberry jam in between the cakes. Wrapped them in a polythene paper tightly. Kept in the fridge for an hour before cutting it. Applied chocolate icing- beat butter & icing sugar together until soft & creamy, add coco powder. Apply at the top of the cake. In pink portion I added strawberry essence!! You can make rainbow cake with 7 layers
