Arbi Curry - Rajashree Acharya Kamat
Recipe:
Clean the Arbi under running water & then boil it in a pressure cooker with li'l salt. After cooling, remove the outer skin & cut them into small circular pieces. Heat about 3 tblsp oil in a pan & fry these pieces till golden from all sides. (Don't take more oil to fry all pieces at the same time. Do it in batches with li'l oil. This oil then becomes useless for other purpose as the arbi are sticky.) Grind red chillies, garlic, ginger, cumin seeds, coriander leaves,tamarind, 1/2 tomato & 1/2 onion to a fine paste. After frying the arbi, some oil will be remaining in the pan. If not, add some & heat it. Fry finely chopped onion & tomato in it. Then add the masala & fry it too. After 2-3 min. Add the fried arbi pieces & salt & mix till homogenous. Ready to serve.
