Onion Samosa

Onion Samosa - Nisha Baliga Shenoy

Ingredients:
1 cup wheat flour
1 cup maida
1/2 tsp carom seeds
oil
salt to taste.
pinch cooking soda.
This is for the outer layer

FOR THE STUFFING2 to 3 onions chopped
1 cup Beaten rice ( this absorbs the moisure )
1 tsp chilly pd
1 tsp corainder pd
1/2 tsp garam masala pd
1 tsp lemon juice
1/2 cup coriander leaves chopped finely
1 tsp mint leaves chopped
salt to taste.


METHOD

Mix the flours with salt and carom seeds . Heat oil about 2 tbsps of oil and pour it on the flour, wait for a while mix well.
Add water little bye little and knead into a chapati dough.cover it with a wet cloth and keep aside for 20 minutes.
For stuffing-Mix all the ingredients under the items " stuffing" . Check for salt and spicy. keep aside. The Beaten rice poha will absorb the moisture contents.
Now the next step is to Make the outer layer. Knead the dough. make lemon size balls. and roll out chapatis.
Cut into stripes. Slightly roast the stripeson tawa untill u see the bubbles. Repeat the same for all.
Cover with a wet cloth till further use.
Now make a cone from the stripe.
Fill the stuffing. wrap it with the stripe and seal with maida paste.
Deep fry these in hot oil on medium flame.
Yummy samosas r ready.
U can make any stuffing of ur choice.
U may not get the perfect samosas for the first time. I have tried many time to get this perfect samosa.
