Falahari Chatpate Aloo (A Tangy Potato Dry Curry For Fasts)

Falahari Chatpate Aloo - Sunayana Gupta

INGREDIENTS
Potatoes (Boiled & Peeled) – 4 large
Cumin Seeds – 2 tsp
Green Chilly (Chopped) – 2 tsp
Ginger (Chopped) – 2 tsp
Lemon Juice – 2-3 tsp or to taste
Sendha Namak (A kind of ‘Salt’ eaten during fasts) – To taste
Fresh Coriander (Chopped) – ¼ cup
Desi Ghee (Clarified Indian Butter) – 2 tsp


method:
Cut potatoes in 1 inch cubes. Keep aside.
Heat desi ghee in a pan. Add cumin seeds, chopped ginger, green chillies and give a stir.
Add potatoes ,sendha namak (Salt) and cook till it attains a nice golden color.
At the end add lemon juice, fresh coriander and serve.
