Rava Dosa - Laxmi Bhandary
Ingredients: 1 cup maida, 1 cup Bombay rava, 1 cup rice flour, 1 pinch baking soda, 1 tsp mustard seeds, 4 tsps ghee, a few curry leaves, 1tsp cumin seeds, 5 to 6 green chillies and salt to taste.
Method: Sieve maida. Mix a cup of water & baking powder with it, and prepare a batter free from lumps. Set aside for 1 hour. Just bebore preparing dosa, mix together Bombay rava & 4 cups of water, adding salt. Add this mixture to the maida batter & dilute it to the consistency of panpolo batter by adding little water. Season with mustard, cumin, chopped green chillies & curry leaves in ghee. Roast it on one side.
