Schezwan Fried Rice

Schezwan Fried Rice - Anita Pai
For Schezwan sauce:
Chpd grn chillies 2
Spring onions 2 finely chpd
Ginger 1" pc grated
Garlic 10 cloves finely chop 2 cloves
Celery 2-3 inches stalk chpd in small pcs.
Red chillies whole 10-12 boil in water for 5-7 mins n make a paste wid remaining garlic.
Oil 1/2 cup
Water 1/2 cup
tomato ketchup 3 tbs
Salt to taste
Vinegar 2 tsp
Method:
Heat oil n add chpd garlic, green chillies, spring onions n ginger n sauté for a min.
Add red chilli garlic pst n sauté . Add water, celery, ketchup n salt n mix well. Then add vinegar n spring onion greens. Simmer for a min n take off heat. Cool n store. Keep refrigerated.
Now for fried rice
Heat 2 tbs oil in a wok . Add 1 finely chpd onions n 1 tbs chpd garlic. Sauté well on high heat. Then add finely chpd mix veggies like beans ( 3-4) carrots ., mushroom (opt) n sauté for few more mins on high flame. Then add 1/2 tsp msg ( opt) 1 tsp soya sauce, 3tbs
Schezwan sauce, 1 tbs red chilli sauce. Mix well and add cooked rice 3 cups. Rice shud be firm aft cooking dont over cook . Mix well n add salt to taste. Finally add handful of chpd spring onion greens n serve hot .
Note: for non veg lovers substitute veggies with prawns or chk or mixed.
