A QUICK BRINJAAL MASALA - Vidya Pai
RECIPE: 

For 5-6 small brinjals. Make four slits on small brinjal from the opposit side of the stalk like we make for sagle. Do not cut them.Leave them in water. chop finely 1 big onion. add red chilly powder, salt amchoor powder. mix well. stuff this masala into the slit brinjal. keep aside. In a pan add oil. put mustard and udad dal. when it splutters add the brinjals. do not add water. If there is an excess of onion masala, put it on the top of brinjals. Cover and cook on slow fire. when it looks little bit dry, transfer to a microwave dish and cook on high for 4 minutes. Garnish with coriander leaves. within 10 minutes a tasty brinjal masala is ready. enjoy with rice or chapati..
