Veg Fried Rice

Veg Fried Rice - Devika Pai


Soak rice in water for 30 mins. Drain nd cook d rice in water til d grains r jus cooked. Strain in a colander nd let d rice cool completly. Cover nd keep aside.
When d rice is cooling, cut d veggies (carrot, caps, beans and cabbage)nd keep aside.
Heat oil in a wok or pan, tip in ginger garlic saute for some seconds, no need 2 brown d ginger n garlic.Add spring onions n stir fry til dey r transparent. Add al d veggies nd stir fry on high flame.
U ve 2 Continusly stir d veggies so dat its uniformly cooked nd don get burnt. D veggies ve 2 b cooked til dey retain thier crispyness nd crunchiness.
Add d soya sauce, green chilli sauce, salt, pepper powder.Stir quickly nd add d rice. Stir fry for few mins till d sauces hav coated d fried rice well.
Garnish wid spring onions nd serve hot wid chilli chicken gravy(recipe posted above)
