Masala Cauliflower - Vidya Pai
Ingredients:
Cauliflower medium sized 1; tomatoes 2; coconut gratings 1 cup; ginger 1/2 "; garlic 6-8 pods; khus khus (poppy seeds) 1 1/2 tsp; haldi 1/2 tsp; chilly powder 2 tsp; cashew nuts 6; dalchini 1-2 sticks; cloves 3; bay leaves 2; oil 1 to 1 1/2 tbsp; onion 1 medium sized; coriander leaves; salt to taste.
Method: Take an appropriately sized whole cauliflower and steam it in salt water till it is cooked. Chop the onion finely and roast in oil till golden brown and keep aside. Grind to a fine paste a masala made with the following: coconut gratings, garlic, ginger, khus khus (poppy seeds), haldi, Chilly powder, cashew nuts and salt to taste. Heat oil in a kadhai. Add cloves, dalchini, and bay leaves. To this add the prepared masala and fry till the raw smell goes. Add tomatoes cut into longish pieces. Now cover the steamed cauliflower fully with the masala. Cook on low flame till the masala gets absorbed, taking care to retain some amount of gravy. Finally, garnish with fried onions and coriander leaves
