Karathe Ambuli Rosu

Bittergourd Raw Mango Curry(Karathe 
Ambuli Rosu) - Sandhya Puranik


Recipe:

Chop 2-3 bitter gourds and press cook..drain the water.. chop 1 raw mango and cook it.. combine both the boiled veggies.. meanwhile roast 1 tbsp coriander seeds 1/2 tbsp urad dal and hing and red chilies 4-5.. cool and grind along with coconut to smooth paste .. add this paste to the boiled veggies along with salt and handful of crushed jaggery .. add water to get desired consistency .. and simmer for few mins... season with mustard and curry leaves preferably using coconut oil... can also add bamboo shoots to the curry.
